Classic Guacamole
1 | ripe avocado |
2 | plum tomatoes, chopped |
2 | scallions (white and light green portion only), thinly sliced |
1 | small jalapeño pepper, seeded and minced (wear glove to prevent irritation) |
1 | tablespoon fresh lime juice |
1/2 | teaspoon salt
Cut the avocado in half and discard the pit. Scrap the avocado pulp into a small bowl; coarsely mash with a fork. Add the tomatoes, scallions, jalapeño pepper, lime juice and salt; mix until just combined. Scrape into a serving dish and serve at once. Makes 6 Servings |
